A useful restaurant kitchen cleaning checklist does not say “clean the line.” It names the surface or component, the trigger, the approved method, the person responsible, and the check that releases it back to production.

The guide is U.S.-focused. The FDA Food Code 2022 is a model code, not automatically the law in every jurisdiction. Build the final sheet from the locally adopted code, permit conditions, approved food-safety plan, equipment instructions, chemical labels, and direction from the responsible health authority.

This table is a control map, not a substitute for station method cards. Every row on the working checklist should point to the exact method the employee was trained to use.

Start every cleaning task with a safe route

A clean route keeps exposed food away from dirty parts and moves each station through wash, rinse, sanitize, air-dry, and verification according to the approved method.

The route should move in one direction:

  1. Stop and protect. Pause the affected food work. Remove, cover, or otherwise protect food, clean utensils, packaging, and single-use items from splash and chemical exposure.
  2. Isolate safely. Follow the equipment manual and workplace procedure for shutdown, cooling, unplugging, locking out, or specialist service. Do not let a checklist invent an electrical or mechanical isolation method.
  3. Disassemble. Remove only the parts employees are trained and authorized to remove. Keep dirty components on the dirty side of the route.
  4. Wash. Remove food and soil with the approved detergent, tools, water conditions, and sink or machine procedure.
  5. Rinse and sanitize. Rinse when the method requires it, then apply the approved sanitizing step to food-contact parts after cleaning.
  6. Air-dry and protect. Do not towel-dry clean food-contact items unless the adopted procedure specifically permits it. Keep them positioned to drain and protected from recontamination.
  7. Verify and release. Check the named parts, concentration control or machine record where applicable, assembly, guards, and dry condition before production restarts.

Dirty parts should never travel over exposed ingredients or through a clean assembly area. Draw the path for grinders, slicers, mixers, processors, and other disassembled equipment if the route is not obvious.

Opening checks: inspect before production begins

Opening is primarily a release check, not an attempt to finish last night's close. The opener should be able to see whether the kitchen was left ready.

  • Confirm every handwashing sink is accessible, supplied, and used only for its intended purpose.
  • Inspect food-contact surfaces and stored utensils for residue, moisture, pests, damage, or overnight contamination.
  • Check that boards, smallwares, pans, containers, and thermometers are clean, protected, and in their assigned zones.
  • Verify warewashing equipment, sinks, test tools, and chemical dispensers are ready under the approved procedure.
  • Inspect floor routes for grease, standing water, trip hazards, leaking equipment, and obstructed exits.
  • Check waste containers, liners, lids, grease routes, and external doors before receiving or prep begins.
  • Confirm cleaning tools are clean, serviceable, separated by zone where the house system requires it, and stored to dry.
  • Review any unresolved close-down defect before releasing the affected station.

If an opener repeatedly repairs the same close failure, record it. The fix may be a longer close allocation, different disassembly time, a repair, a clearer method card, or a change in ownership—not another checkbox.

Between-task cleaning: write the trigger on the station

Section 4-602.11 of the FDA model code identifies circumstances when equipment food-contact surfaces and utensils are cleaned, including specified changes between raw animal foods, a change from raw to ready-to-eat work, certain produce/TCS-food changes, before some measuring-device uses or storage, and whenever contamination may have occurred.

Colour-coded tools can support separation, but colour alone does not clean anything. The checklist must cover the bench, handle, container, sink route, employee hands, and any touchpoint involved in the change.

During service: control the clock without stopping the line

For equipment food-contact surfaces and utensils used with time/temperature control for safety food, the FDA model code has a default cleaning frequency of at least every four hours. It also contains specific exceptions, including provisions for named refrigerated conditions, storage containers cleaned when empty, certain temperature devices, and approved schedules.

Create a log only for the items to which the adopted requirement or approved procedure actually applies:

These are examples of log design, not a determination that the rule applies to those items. Stagger work around production. Give the employee replacement utensils or a second prepared station when the operation cannot safely wait for washing, sanitizing, and air-drying.

Monitor wiping cloths, sanitizer systems, hand sinks, waste, floors, and splash continuously. A timer cannot override visible soil, suspected contamination, or an unsafe floor.

Closing checklist: assign objects, not rooms

Divide the kitchen into fixed close-down zones so two people do not assume the other cleaned the same landing.

Food-contact equipment and utensils

  • discard, cool, cover, label, or store food under the approved food procedure before cleaning begins;
  • disassemble the named equipment to the trained level and route parts without crossing exposed food;
  • complete the approved wash, rinse, sanitize, and air-dry sequence;
  • clean and protect thermometers, utensils, boards, pans, containers, and smallwares;
  • inspect joints, guards, seals, blades, hubs, chutes, and undersides that the method card includes;
  • record damage or a component that cannot be safely removed or cleaned.

Line, cooking and exterior surfaces

  • clean cooking and baking food-contact surfaces at the applicable frequency;
  • clean microwave cavities and door seals by the manufacturer-recommended procedure;
  • clean controls, handles, splash zones, landing shelves, equipment sides, and accessible frames without contaminating food-contact parts;
  • allow hot equipment to reach the safe condition specified by its procedure before employees begin work;
  • leave no pooled chemical, rinse water, loose tool, or unprotected clean part on the line.

Section 4-602.12 of the FDA model code contains at-least-every-24-hours references for cooking and baking equipment food-contact surfaces, with a stated hot-oil exception, and for microwave cavities and door seals. Read the provision and the equipment manual rather than applying “24 hours” to every component.

Sinks, floors, waste and room fabric

  • leave hand sinks unobstructed and clean without using them for tools, cloths, or food work;
  • complete warewashing-sink and machine close-down under the approved method;
  • clean floors with the assigned dustless or wet method, working around protected food and clean equipment;
  • clean floor-to-wall edges, mats, casters, waste frames, and the routes where grease and debris actually collect;
  • remove waste through the designated path and clean any leak or escape immediately;
  • clean splash-soiled walls, doors, kick plates, and shelving instead of deferring visible soil to a weekly list.

Plan weekly access work from evidence

The FDA model code requires nonfood-contact surfaces and physical facilities to be cleaned at a frequency necessary to prevent soil accumulation and keep them clean. It does not establish a universal “every Sunday” deep clean for every object.

Use weekly as a starting management cycle for slower-loading areas such as accessible floors behind movable equipment, removable shelf frames, wheels and casters, door tracks, dry-storage edges, wall junctions, gaskets, tool racks, and approved drain tasks. Shorten the interval if soil appears before the due date. Lengthen it only when inspection evidence supports the change and no governing document sets a different frequency.

Separate routine cleaning from incident response

A spill of ordinary food soil is not the same as broken glass, sewage, pest contamination, a chemical release, or a vomiting or diarrheal event. The FDA model code requires written employee procedures for vomiting and diarrheal events that address contamination and exposure. Those events should trigger the dedicated response procedure, isolation, disposal route, product choice, protective equipment, and manager escalation—not the ordinary mop bucket.

Cleaning, sanitizing, and disinfecting are also different actions. Clean soil away first. Use the locally approved food-contact sanitizing method where required. Use a disinfectant only for the labelled site, surface, organism, method, concentration, contact time, and rinse direction. EPA's pesticide-label guidance explains that antimicrobial directions are specific to the registered use.

Never strengthen a mixture by guesswork or combine chemicals. OSHA's food-service chemical guidance emphasizes training, labels, safety data sheets, protective equipment, and the danger of incompatible products.

Give the manager a five-point verification route

At close, verify the same difficult points instead of signing from the office:

  1. one disassembled food-contact component and its reassembly point;
  2. one handle, guard, joint, or underside that commonly retains soil;
  3. one floor-to-wall or equipment-edge route;
  4. the hand sink, warewashing area, and chemical/tool store;
  5. the waste exit and one unresolved repair or exception.

Record the failure, immediate correction, owner, and root cause. If the same point fails twice, change the allocation, method, tool, access, training, or repair plan. Verification should improve the system, not merely create a signature.

What should a restaurant kitchen clean every day?

Complete the food-contact and utensil work required by the adopted code and operation, plus cooking surfaces, microwave components, equipment exteriors, sinks, floors, waste, splash zones, and other areas loaded during that day. “Daily” does not replace immediate, between-task, or timed cleaning triggers.

Is every four hours the rule for every kitchen surface?

No. The FDA model-code provision applies to specified equipment food-contact surfaces and utensils used with TCS food and includes exceptions. Identify the exact item, use, temperature condition, trigger, and locally adopted rule before putting it on a four-hour log.

Should staff sanitize before or after cleaning?

For food-contact surfaces, cleaning comes first; sanitizing follows the approved cleaning steps before use where required. Applying sanitizer over food soil does not complete the process. Follow the adopted method and exact product label.

How long should a kitchen close-down take?

There is no responsible universal time. Measure the real task by zone, safe cooling and disassembly, soil load, equipment, staffing, and air-drying. Allocate enough paid time to finish and verify the method without shortcuts.
