Size it from the busiest docket, number and dimensions of plates, finishing tasks, holding equipment, screen or rail, hand space, expo stance, server pickup, queue behavior, cleaning, and applicable requirements. Build it at full scale with the actual plateware and run the peak menu before approving fabrication.
Where should the expo stand?
Place expo where the assigned person can see relevant kitchen stations, every plate position, the ticket or screen, server pickup, and approaching staff without stepping into production or circulation. Test voice communication, task light, heat, reach, controls, and a second person approaching. The best stance follows the menu and team, not a generic centerline.
Should a kitchen pass use heat lamps?
Use approved holding equipment only where the menu, food-safety plan, capacity, time and temperature rules, equipment data, electrical load, ventilation, cleaning, and local requirements support it. A heat lamp does not make indefinite waiting acceptable and may damage some dishes. Define maximum holds and ownership for each dish before choosing equipment.
How do you keep an open kitchen pass looking tidy?
Give every plate, ticket, tool, garnish, towel, container, reject, and waste stream a specific position and maximum quantity. Keep the pickup edge empty, route dirty objects elsewhere, limit backup stock, and provide enough capacity for the peak. Audit the pass during service, not only after cleaning. Repeated clutter usually reveals an undefined task, missing storage, poor reach, or a docket larger than the landing.
A good pass shortens the distance between “dish finished” and “guest served,” but speed is only the visible result. Underneath it are ownership, protection, light, timing, communication, and a route that stays clear when the fifth plate is late. When those decisions are made before service, expo can coordinate the food instead of negotiating the furniture.
